After seeing the private dentist and having a hefty £700 bill to pay or fear losing my tooth and becoming a toothless trotter, along with many other fowl promises, I am having to cough up the money somehow, and just eat grass fed grass for a year, at least I know this time my tooth is going to be done properly, without any nasty surprises.
The recipe today is meatballs with pasta, inspired by my lovely polish grandma who used to make the most delicious ones that made me scream with happiness, mine weren’t as good as hers, but no one can compete with grandmas meatballs.
- half a container of fresh lamb mince
- 4 cloves of garlic
- fresh chopped thyme
- fresh chopped rosemary
- fresh chopped chives
- pinch of rock salt
- nice chunk of butternut squash diced
- red onion diced
- 1 sweetcorn sliced from the core.
- 1/4 courgette Zucchini chopped
- 1 carrot diced
- 1 garlic
- fresh basil
- 1 courgette spiralized
- small handful of chopped kale.
Put the mince in a bowl and then add 3 cloves of garlic, thyme, rosemary, chives, salt and mix together until all nicely blended, then shape into small round balls with your hands, then add coconut oil to a metal frying pan and brown until sealed. Then add to the pan the onions, 1 garlic, sweetcorn, courgette, carrot, basil and kale and let fry in the meat juices for a few minutes, then let simmer for around 35 minutes until cooked through. At the end add in the spiralized courgette and cook for about a minute mixing it all in, and then it’s ready to munch.
