Lunch:Quick chicken salad with pesto


It’s been a mad week as I had a bad reaction to a temporary tooth filling that was put in, not only was I continuously reacting to it until it got taken out, but then while it was being removed my lip swelled to the size of a greenfinch and became completely numb, even though I didn’t have any injections put in, it was a very distressing and upsetting.  I then had to go to work and everyone thought I’d had lip fillers put in, they were all in hysterics, and to be fair I did look pretty funny. Luckily the swelling had gone by the next day, but still recovering from the reaction as it has set my histamine levels through the roof, it just goes to show you need to be careful when having your teeth done and check what ingredients they are using.


The recipe I have created is nice and simple and quick to make as sometimes it’s nice not to spend so much time in the kitchen, especially when you are feeling rotten.




Ingredients – chicken salad

  • 1 chicken breast chopped
  • half a sweetcorn chopped off the core
  • 3 spring onions finely chopped
  • chopped fresh thyme
  • chopped fresh parsley
  • chopped fresh salad, half a handful
  • half a grated sweet potato
  • half a grated carrot
  • half a grated beetroot
  • small chunk of chopped cucumber
  • coconut oil (odourless)
  • pinch of rock salt



Heat up the  coconut oil, then add in the chicken, sweetcorn, spring onion, thyme and parsley, salt and fry for around 25-30 minutes until cooked through. Then put all the rest of the ingredients into the bowl and then add the chicken mixture into it, then serve with the pesto


Ingredients – Pesto

  • 1/4 cucumber
  • 6 tablespoons olive oil
  • handful fresh basil
  • half a fresh garlic
  • pinch of rock salt

Put all the ingredients into a blender and blend until smooth, then it’s ready to serve.

    1. Sorry you had to go through it too, there is still something not right, so I am having to go to a private dentist this time to get to the bottom of it, i’m hoping he with be more understanding of my condition, and careful with what products he uses. Thats kind of you to say about the salad, I tried to keep it more simple this time 🙂
